Fluke, also known as summer flounder, has good body with delicate flavor and flaky fine texture. Cooking fluke, like other flounder is best kept simple. This versatile, easy to prepare fish is a staple in our own freezers. It is great for broiling, pan-roasting and ceviche. 1 portion is approx. 16 oz (1 lb). We recommend 8 oz. per person.
